Kyle’s Summer Party

LoveSeen’s Chief of Staff and resident television personality, Kyle DeFord, is a staunch believer that there are two components to a successful summer soiree: dip and music.
Summer means crab dip. Not real crab, but wonderfully delicious imitation crab. This was my grandmother’s recipe, and snacking on it honestly made me feel like the fanciest 12-year-old in the world.
This treat, named after my grandmother’s best friend, is served best with a classic Triscuit, or if you’re looking for the upgrade, a classic Ruffle. (Editor’s note: ANYTHING but a Muncho.)
Mary's Crab Dip 1 large package of Philadelphia cream cheese
1 package imitation crab (Think your run-of-the-mill, vacuum-sealed variety from the cold section.)
1/2 cup mayo (obviously Hellmann’s or Duke's)
4 tbsp onion (minced)
2 tbsp ketchup (Heinz, not “house” or “fancy”)
2 tbsp green pepper (minced)
Salt and pepper to taste
Instructions 1.Mix cream cheese, ketchup, and mayo. Beat till smooth.
2.Blend in the balance of ingredients.
3.Refrigerate and serve cold or room temp. I’m not the boss of you.
